Vegetarian Curry

Oi! Oi! Everyone!

One of my all-time favourite dish to make is curry! I love the spices in a curry and it is pretty easy to make. It is perfect with rice.

You will need:

  •  400 g of carrots
  • 2 courgettes
  • 1 sweet potato (must weight between 300 – 500 g)
  • 3 shallots
  • 3 garlic cloves
  • 40 cl of coconut cream
  • 50 g of curry paste (you can add more if you like really spicy food)
  • 3 tablespoons of tomato paste
  • 2 limes
  • 1/2 a tablespoon of cumin
  • 1 small chilli pepper (optional)
  • salt & pepper
  • ground basil
  1.  You need to rinse and peel the carrots and cut it into thin slices.
  2. Rinse and peel the sweet potato and cut it into small cube.
  3. Rinse and cut the courgettes in quarter with the skin.
  4. Cut the shallots and garlic in small pieces.
  5. Heat a frying pan with a little bit of coconut oil.
  6. Put the shallots and garlic.
  7. Once they are golden you can add all the vegetables.
  8. Turn down the heat and cover.

In the meantime:

  1. In a bowl stir in the coconut cream, tomato and curry paste and lime juice.
  2. If you decided to put chilli pepper add it, add ground basil and cumin.
  3. Coat the veggies with the sauce.
  4. Add 1/2 a glass of water.
  5. Let it cook for about 2 hours at low heat.
