Tabbouleh

Oi! Oi! Everyone!

For today’s recipe, I decided to make tabbouleh, one of my favourite starter and it can also be served as a main dish. It is perfect for summer when you don’t want to eat something hot or heavy on your stomach. Fresh and with vegetables! What else can you ask?!

You will need:
  • 200 g bulgur wheat or couscous
  • 1 red bell pepper
  • 200 g tofu
  • 140 g green peas
  • 140 g corn
  • 2-3 tbsp tomato paste
  • 1 tsp tandoori spice
  • 1 tbsp olive oil
  • 1/2 lemon
  • salt & pepper
I like to prepare everything before starting to cook anything so if you’re like me, cut the bell pepper and the tofu in little squares.
  1.     Cook the couscous or bulgur wheat as indicated on the packet.
  2.     In a frying pan on medium heat, add 1 tbsp of coconut oil (or any other oil) and put the tofu and cook it until it gets a nice brown colour and reserve.
  3.     Go back to the couscous and add in the tomato paste and mix until combined.
  4.     Add the bell pepper, tofu, green peas, corn and mix well.
  5.     Put salt and pepper as desired
  6.     Put it in the fridge to let it cool down.
Before serving you can cut 1/4 of lemon and put it on the side of the plate and if you like you can put some in the tabbouleh. (Trust me sooo good!).
Et voilà it is ready to be served!! Enjoy!!!
