Spicy Wheat Aubergine

Oi! Oi! Everyone!
For today’s recipe, it will be a recipe that I took from Niomi Smart’s cookbook and  I changed some bits here and there mainly because I didn’t have all the ingredients of didn’t like them (!!!). It was supposed to be quinoa but I decided to make it with wheat and let me tell you it was so yummy and very healthy. In this dish, you can find aubergine, onion, tomatoes, yellow bell pepper, cherry tomatoes, turmeric, cinnamon and ground cumin.
To make the recipe you will need:
  • 200 g quinoa or wheat
  • 1 aubergine
  • 1 yellow bell pepper
  • 10 cherry tomatoes
  • 1 onion
  • 1 tbsp coconut oil
  • 1 tsp ground cumin
  • 1/2 tsp turmeric
  • 1/2 tsp ground cinnamon
  • 1, 400 g tin chopped tomatoes
  • 1/2 red chilli
  • A large handful of spinach
  • Salt & Pepper


  1. Dice the onion and aubergine, cut the cherry tomatoes in half, deseed and dice the bell pepper and red chilli.
  2. Heat the coconut oil in a frying pan over medium heat, add the onion and fry for 5 minutes.
  3. Add the spices and let fry for a couple more minutes then add the aubergine and fry for about 10 minutes or until softened. You can add more coconut oil if needed.
  4. Add the cherry tomatoes and pepper with a pinch of salt and black pepper and let it cook for 5 more minutes.
  5. Add the tinned tomatoes and chilli pepper and bring to a simmer. Wait 5 more minutes.
  6. Remove from heat and stir in the spinach and quinoa or wheat.
