Pinterest: I’ve tried it, chickpeas curry. Vegan, GF

Oi! Oi! Everyone!

Ok, I know another curry recipe! But it is something that I’ve never done before. The other day I was looking for inspiration on Pinterest and found this recipe! I thought I would give it a try. It was absolutely delicious and very simple to make! Let me know if you want me to try other Pinterest recipes! I would love to.

You will need:
  • basil, leaves
  • 1 tin chickpeas
  • 3 cloves garlic
  • 1/2 lime
  • 2 onion medium
  • handful cherry tomatoes
  • 1 tin coconut milk
  • 1 tbsp curry paste
  • 1 tsp maple syrup
  • 1 tbsp soy sauce
  • 130 g basmati rice
  • coconut oil
  • salt & pepper

 

Now, let’s make this curry!
  1. Cook the rice and reserve.
  2. Dice the onions and garlic and let them brown over medium heat in a frying pan with coconut oil for about 5 to 7 minutes.
  3. Add the curry paste and stir then add the coconut milk and the chickpeas.
  4. Now, add the maple syrup and soy sauce.
  5. Let it cook for about 10 minutes over medium heat. Stir occasionally.
  6. Cut in half the cherry tomatoes and add them in the curry.
  7. Add a pinch of salt and pepper.

TADAH! It is now ready to be enjoyed!!
