Indian Dahl, Vegan

If you know me, you know my love for Indian food. I really -like- REALLY love Indian food. I love to cook it and, surprise, surprise, eat it. Before this recipe, I didn’t cook for a “long” time and thought it was time for me to make another one, and a dahl came to mind. It made me feel like I was doing a risotto, the Indian way! (way better!).  I know, my newest recipes are vegan and you might think, is he turning vegan? But no! Not now! But I do enjoy cooking without dairy product and I, right now, I don’t want dairy. Maybe a step closer to veganism? Who knows! Let’s get to the delish recipe…

-Ingredients-

  • 2 tbsp coconut oil
  • 1 medium onion
  • 2 cloves garlic crushed
  • 2 cm ginger finely grated
  • 2 tsp mustard
  • 2 tsp garam masala
  • 1 tsp cumin ground
  • 1 tsp turmeric
  • 1 tsp chilli powder
  • 300 g red lentils
  • 900 ml vegetable stock
  • 2 tomatoes diced
  • 1-2 tsp salt

 

-Instructions-

  1. Place a large saucepan over medium-high heat. Add the coconut oil.
  2. When the coconut oil melted, add the onion, garlic, ginger and mustard. Cook until the onion is translucent.
  3. Add the garam masala, cumin, turmeric and chilli powder and saute for 5 minutes or until fragrant.
  4. Add the lentils and stir to coat with the spices. Add the vegetable stock and tomato, bring to a boil, then reduce to a simmer.
  5. Simmer, stirring occasionally, for 30-40 minutes. until the lentils have softened. Add more liquid if the lentils start to dry out before cooking through.
  6. When the lentils are cooked through, add the salt, seasoning to your preference.
  7. Serve immediately.

I don’t know you but, I just love it -SO- much. I honestly could eat this for the rest of my life, and I wouldn’t mind. Ok, maybe a little.
