All Chocolate Cookies

I think I found one of the BEST cookies recipes ever, Why this one is also the best? FULL chocolate! It cannot get any better than this. It is how cookies should all be! Soft and chewy on the inside and not too hard on the outside. It is personally how I like them. With this recipe, you can make around 24 cookies, plenty for the week…or the night-ish. That’s what happened with mine, once I started I can’t stop.

  • 100g/ cup Flour
  • 1 tablespoon Cocoa powder
  • 2 pinch Baking powder
  • 2 pinch Salt
  • 210g/7oz Dark chocolate
  • 90g/3oz Chocolate chips
  • 80g/ cup Soft butter
  • 2 eggs
  • 130g/ cup Caster sugar
  • 80g/¼ cup Brown sugar
  • 1 teaspoon Vanilla extract

  1. Preheat oven at 180 °C/350°F.
  2. In a big bowl, sift flour, cocoa powder, baking powder and salt.
  3. In a saucepan on low heat, melt 210g/7oz of chocolate with butter. Stir from time to time.
  4. With an electric mixer high speed, beat the eggs, sugar (brown sugar too) for 2 minutes. Add vanilla extract and mix well. Mix in melted chocolate and mix for around a minute. On low speed, add the chocolate chips (90g/3oz).
  5. With a tablespoon, take the equivalent of 1 tablespoon of cookie dough and put it on the parchment paper. Be sure to leave some space between the cookies.
  6. Bake for 9 to 11 minutes or until the outside of the cookies are brownish and the inside still soft.

If I am completely honest with you, it is my mum who found the recipe and she tried it first, it was as delicious! Of course, I had to try it myself and share it here, it’s just too good not to share.
